Pesto Shrimp Flatbreads


So happy to be back from a four day business trip to California! Cross country trips take me so long to recover! Some highlights from my whirlwind trip.. In & Out Burger (OMG!!) and amazing sushi. Gosh I wish I stayed longer, but I need to prep the house for Thanksgiving!I've been trying new recipes for the last month to tweak what I will be making. Still planning your menu? How about yummy appetizers? Pesto Shrimp flatbreads are so yummy and super simple to make!


My friend Dan and I randomly made up this recipe while we were cooking for friends last weekend. The key to this flatbread is to not overcook the shrimp! How do you do that?Cook the shrimp one minute on each side then add to the pizza. I use ready made crusts ( thin grilled pizza thins) so it only takes ten minutes in the oven to bake. You can also use tortillas as a crust or french bread. If you use french bread just scoop out most of the inside. The combo of pesto and shrimp is so versatile. You can even toss it with some pasta or quinoa! You can either make a cilantro or basil pesto. I used basil pesto and it was delicious! To cut down on some time you can make the pesto ahead of time or use store bought. Whether you choose to eat this for a weeknight meal or a holiday appetizer your tastebuds will be very happy!

Pesto Shrimp Flatbreads

Ingredients:
3/4 cup basil ( or cilantro pesto)
3/4 cup feta or goat cheese
1/2 cup parmesan
1/2 cup fresh mozzarella ( shredded)
1 tsp red pepper flakes
1 pound shrimp ( deveined)
2 tsp olive oil
S&P
1/2 of a lemon
1 take & bake pizza shell like Top This!

Directions:

1. Salt and pepper shrimp the saute on medium low in 2 tsp of olive oil for one minute on each side. Squeeze lemon juice on the shrimp.then set aside on paper towel.

2. As shrimp is cooking spread pesto on pizza crust. Sprinkle deta and parmesan on the crust.

3. Remove tails from shrimp and add to pizza ( they will be a little undercooked)

4. Top pizza with mozzarella red pepper flakes and bake for ten minutes or until cheese is melted.
